Meal Planning Monday

Another day, another dollar. Joining in At Home with Mrs M.



Monday; Quick noodle stir fry. Probably a beef stir fry with a soy sauce coating and plenty of quickly fried vegetables.

Tuesday; Pasta Bolognese. I made a large pot and froze a portion for a night when coming in and going out were too close together to do anything exciting. Tonight's the night! Wish me luck at Number 2's parent consultation evening. I'm hoping for a reasonable report. Please.

Wednesday; Chilli pot with potato wedges. I like to put some chorizo in as well as kidney beans. Nigella says to put dark chocolate in as well....

Thursday; Cowboy Casserole. That's sausages in a tomato sauce baked beneath a layer of cheesy mash to you and me. We eat sausages probably once a week, so I am always after a different way to serve them. This was an intriguing idea that I'm giving a go. If it's really good it might become a regular feature.

Friday; Hung Shao Pork. Hung Shao Pork is one of those meals you pick up and don't put down. Granted it takes 90 minutes of cooking to turn pork belly into an unctuous melting assemblage, but it is well worth it, and that's 90 minutes cooking mostly unwatched so it's not the most taxing thing to do. It comes from Delia Smith's Winter Collection from the early 90's.

Saturday; Meal at Ma's or Ma for tea?

Sunday; Roast pork with Aldi's potato gratin. Easy and so good on a cold January night.

  1. Everything sounds delicious! We are having Spaghetti Bolognese for dinner tonight. I do the same as you and make a big batch and then freeze some for another day. You should definitely try some dark chocolate in the chilli, it is divine!!! You don't taste chocolate, it just gives a richness and another bit of flavour. I really like the sound of your cowboy casserole, I will have to try that one sometime! Hope that parents evening goes well and that you enjoy all of your meals this week! xx

  2. It's a while since we've had pasta bolognese, I think I'll do that one day this week. I like the twist on the sausages, I might try something similar myself. Roast beef and all the trimmings for us tonight. Good luck at parent's evening, it's Eleanor's on Thursday.

  3. Hope parents evening goes well. I reckon the sausages and cheesy mash thing would go down well here so thanks for that. I've been trying one new meal a week with varying success, this week it's cola pork.

      Cola pork sounds interesting; is that like Nigella's ham recipe? How on earth do you do it?

    1. Probably, I mean if you'd eat sausages with cauliflower mash normally then would it be just the same if you put the mash on top instead of besides?

  5. I use my slow cooker a lot so we always have leftovers for another day/month. I add chorizo to a lasagne too, in reality its a pot of tomatoey, herby mince stuff which can be used as bolognese or chilli ets.Hope you get a good parents evening result x

    1. Could you do cauliflower mash as well? Or sweet potatoes instead of ordinary? I have to post it on Friday/this weekend when I've made it and know how it works!

    1. It takes 90 minutes of cooking to do it properly, but when it's done the meat just melts in your mouth!

  10. Cowboy Casserole sounds lovely. Do let us know if it's as good as it sounds. I have found some hidden sausages a the back of the freezer as I am trying to defrost it but get so sick of sausages by themselves.

    1. Thank you. I'm having sweet potato wedges instead, as I'm back on the diet wagon again! But the rest of the family love potato wedges. I sprinkle a thin layer of grated cheese over them a few minutes before the end to add an extra yumminess.
